Directions
You are coming home, bit dizzy from the drinks you had at a bar, hungry, and lazy to cook. So you grab some spaghetti, olive oil and garlic, and make this amazing dish that takes as much as it takes to cook some pasta. It is very simple, but also so good that you could impress anybody with it.
It is, as the name says, pasta with garlic and olive oil, but you can put some other stuff as well, like red pepper flakes, anchovies, parsley, or Parmigiano. I usually make mine with some parsley for colour and grating of Grana Padano on top, but please, try it first in its original form, it’s worth it

PrepareFill a pot with water, add salt, and put it on heat to come to the boil. For every 100g of pasta you should use 1 liter of water, and 9g of salt for every liter of water. While you wait for the water to come to the boil, peel and slice the garlic cloves as shown in the photo. Do not use garlic crusher because garlic can become bitter more easily. |

CookOnce the water has come to the boil, put the pasta inside and cook it one minute less than written on the package. Stir the pasta every minute or so to prevent sticking. Take a pan and add olive oil and garlic to it. Put the pan to the medium heat and take it off when you see garlic starting to change color, which will take less time than for pasta to cook. Don't wait for it to turn golden brown, it should be pale, just a bit darker than raw garlic. |

FinishWhen the pasta is ready, transfer it to the pan with garlic and reserve some pasta cooking water. At this point you can add parsley if you want, but don't add parmesan yet. Put the pan back to medium heat and mix thoroughly all the time. Add some pasta water (few tablespoons) if the mixture looks dry. Remove from heat after cca one minute and plate it up. Add a drizzle of fresh olive oil and if you want, some parmesan. |
